Chili Lime Chicken
4-8 Boneless skinless chicken thighs or breasts
Olive oil(we like to use spanish olive oil from world market)
Spice rub for chicken
Ancho chili powder
Place all seasonings to taste in a small bowl and stir until well combined.
Drizzle olive oil on one side of chicken making sure it is evenly coated. Sprinkle seasoning on chicken to your liking. Squeeze lime juice over the top of the seasoning. Flip over and repeat on the other side of the chicken.
You can let this sit for a few minutes or hours to let the flavors get in there well but i would not let it sit more than overnight.
Grill/broil on one side for 5-10 minutes until the chicken is golden, flip over and continue to cook until the internal temperature reaches 165 degrees.
This would be great for any dish! We used it for nachos but it could be used as the protein in a dinner, for burritos, tacos etc
